    This can be served on a bed of arugula with a balsamic reduction drizzled over the top, or just use plain ol’ hot sauce.

    Directions

     

    Preheat oven to 300° F

    1. Beat eggs in bowl

    2. Add flour, baking powder, cottage cheese, jack cheese, chilies, and butter.

    3. Spray a non-stick spray in the bottom of a 9” x 13” pan.

    4. Pour in mixture and cook for 35-40 minutes. Insert knife to see if middle is set. Do not overcook.

    1 pint small curd cottage cheese
